Vanilla Cookies are the basic tea-time snack, also liked by kids. We usually buy cookies from bakeries but sometimes we complain about the freshness and the desired crunchiness. Let’s look up to the very simple and easy vanilla cookies.

Baking Time: 15 minutes
- Butter – 250 gm
- 3 Eggs
- All Purpose Flour – 350 gm
- Corn Flour – 50 gm
- Vanilla Essence – 2 tsp
- Baking Powder – 1 tsp
- Salt – 1 tsp
- Refined Sugar – 80 gm (Add more if you want it to be sweeter)
- Cocoa Powder (Optional to make Chocolate Flavor Cookie)
Take a Large Bowl and start with butter. Beat it with hand blender until the texture is smooth. Make sure that butter is at room temperature while you beat it.
Add eggs to the bowl and beat it again.
Add Vanilla Essence and Refined sugar to the butter bowl and beat the mixture again. The mixture should be fluffy by now.
Sift all-purpose flour, corn flour, salt and baking powder into the mixture gradually and fold it with a spatula or hands, whichever you find comfortable.
The cookie-dough is ready now. Take a plastic wrap and fold the dough in it and allow it to refrigerate for 10-15 minutes.
Now take out the dough and use your kitchen table to spread the dough well so you can cut it into desired shape. You can spread a butter-paper or plastic wrap beneath and above the dough and roll it into a flat.
Use cookie cutter of the desired shape and take the cut-out pieces carefully and place them in a greased tray.
Pre-heat the oven at 120˚F and Place the Baking Tray and allow your cookies to be baked at 180˚F for 10-15 minutes until golden brown texture is seen.
If you want them to be crunchy, bake them more else they can be less baked if you want them to be soft.
For replacing plain vanilla cookies with yummy chocolate flavor, add ½ Cup of sweet cocoa and ½ Cup of Dark Cocoa Powder in Step-4.
