Tuver na Totha is a very special Gujarati dish of Mehsana city. The dish is often prepared during winter season, but it can also be prepared year around. The main ingredient used in the recipe is Tuver and the dish is very easy to prepare. The village style food can be served for lunch or deal and is a very healthy meal.
Here is the simple recipe for this delicious Gujarati dish.
Ingredients:
1.Tuver totha (soaked)
2.Baking soda ¼ tsp
3.Salt 2 and ½ tsp
4.Groundnut oil ¼ cup
5.Cumin 1 tsp
6.Onion 1
7.Garlic ¼ cup
8.Garlic 2 pcs (whole)
9.Ginger Green chilli paste 1tbsp
10.Green onion (white) ½ cup
11.Green garlic (white) ¼ cup
12.Red chilli powder 2tsp
13.Coriander powder 2tsp
14.Turmeric powder ½ tsp
15.Tomatoes 1/2 cup
16.Chole masala ½ tsp
17.Green onion (green) ¼ cup
18.Coriander ¼ cup
19.Green Garlic (green) ¼ cup
20.Hot water 1 cup
21.Totha masala 1 tsp
Method:
Step 1:
Wash Tuver Totha 3-4 times. Soak the tuver for 5-7 hours.
Step 2:
Take a pressure cooker and add 3 cups of water, baking soda and salt. Pressure cook for 5-7 whistles.
Step 3:
Heat groundnut oil in a pan. Add cumin seeds and saute.
Step 4:
Add fine chopped onion and garlic into it. Then add 2 whole garlic cloves.
Step 5:
Cook till the onion gets golden in color. Add ginger and green chilli paste and saute well.
Step 6:
Add white part of onion and garlic.
Step 7:
Add salt, red chilli powder, cumin coriander powder, turmeric powder and chopped tomato. Cook until tomatoes are softened.
Step 8:
Add chole masala and mix well. Then add green part of spring onion and garlic. Add coriander and cook well.
Step 9:
Add boiled tuver along with its water. Add hot water and cook for 5-6 minutes on medium flame.
Step 10:
Lastly add totha masala, green garlic and coriander.
Serve hot with Bajri na rotla, bread or kulcha. Enjoy 🙂
